A long time runner, in the football off-season and started for fun after football in the 80's.-became a vegan after a Dairy free experiment- Now I think about running, hiking, gardening and food and try to write about this way of living. Removal of dairy from diet in 2003 was successful for pain reduction and elimination of inflammation. -followed with complete removal of animal products in diet Now keeping track of thoughts , feelings and challenges.

First Beets of the Season
I look forward to the progress of the season as each new item becomes ready- Today the Beets arrived and MMM MMMM I am ready for them.
I have gotten some sweet potatoes, turnips, plants to put in my garden, and a few greenhouse grown goodies(tomatoes,cukes) and lots of greens. I look forward to each week and the coming summer when the market expands to Wednesday evening as well.
Can' wait to get home and chow down on some beets and green and other goodies.

Food Combining and health
My switch to vegan diet was made for health and fitness reasons so I want to do the best I can.
The basics as I see(from 3 different books and some web info):
1) Chew completely when eating solid foods{ I even "chew" smoothies and juices}
2) eat most liquid items first - juices, soups, broths
3) Higher water content items next (leafy greens, veggies , fruit) Combos of these matter as well.
4) Eat in a peaceful manner and environment ( not in car or at desk) no TV and calm music
5) Solid foods and heavier proteins later
These make sense and I have been experimenting and so far so good. No major changes in energy but have noticed some digestive changes -feelings and elimination. Improvements.\
More trials and experiments.

Tupperware and Ziploc bags for flavor
Love marinating tofu, seitan or tempeh before cooking or grilling. The new grill pan( birthday gift in April) has been a great new toy as the taste impact of searing grill marks into tofu is great. Love the flavor and the texture I have gotten after marinating then grilling tofu and veggies before serving over a pile of grain or greens or in a bread as a sandwich.
Some years ago saw a chef grilling veggies in such a pan and assembling a great looking sandwich. Adding tofu or a dressing made from it will help me keep up the protein especially when eaten as a recovery meal{ sandwiches are a personal fave}
Just some general wandering thoughts - had to get out and get back to work.
